Ingredients
1 lb boneless chicken breast
1 cup white rice
2 carrots chopped
2 celery stalks chopped
1 small onion diced
3 cloves garlic minced
6 cups chicken broth

1 tsp salt
1/2 tsp black pepper
2 tbsp fresh parsley chopped
Instructions
1. Heat olive oil in a large pot over medium heat and sauté onion, carrots, and celery until softened
