Ingredients
2 pounds boneless skinless chicken thighs
1/2 cup honey
1/2 cup low-sodium soy sauce
1/4 cup ketchup
4 cloves garlic, minced
2 tablespoons rice vinegar
1/2 teaspoon black pepper
2 tablespoons cornstarch
3 tablespoons water
1 tablespoon sesame seeds
1 tablespoon chopped fresh parsley or green onions
Instructions
1. In a medium bowl, whisk together the honey, soy sauce, ketchup, minced garlic, rice vinegar, and black pepper until smooth.
2. Arrange the chicken thighs in an even layer in the crock pot.
3. Pour the honey garlic sauce over the chicken, making sure each piece is coated.
4. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 1/2 hours, until the chicken is tender and fully cooked.
5. In a small bowl, stir together the cornstarch and water to make a smooth slurry.
6. Add the slurry to the crock pot during the last 20 to 30 minutes of cooking and stir gently into the sauce.
7. Cover again and cook until the sauce thickens and turns glossy.
8. Spoon the sauce over the chicken, then sprinkle with sesame seeds and chopped parsley or green onions before serving.
Notes
Do not add the cornstarch slurry at the beginning of cooking, or the sauce can thin out and lose its glossy finish instead of thickening properly at the end.
