500g tomatillos
2 jalapeños
3 garlic cloves
1 small white onion
1 handful fresh cilantro
2 tablespoons lime juice
1 teaspoon salt
Instructions
1. Preheat your oven to broil. Peel and rinse the tomatillos.
2. Arrange tomatillos, jalapeños, garlic (unpeeled), and onion slices on a baking sheet.
3. Broil for 7-10 minutes until slightly charred and softened, flipping halfway.
4. Let veggies cool. Peel the garlic.
5. Transfer everything into a blender or food processor with cilantro, lime juice, and salt.
6. Blend until smooth or your desired consistency.
7. Taste and adjust salt or lime juice. Add water if too thick.
8. Serve immediately or chill before serving. Store in a jar for up to 5 days.
Notes
For a smoky twist, add a roasted poblano pepper to the mix.
This salsa thickens in the fridge—just stir and add a bit of water before serving if needed.
