Ingredients
1 ½ cups all-purpose flour
1 cup unsalted butter, softened
½ cup granulated sugar
1 teaspoon vanilla extract
1 (14 oz) can sweetened condensed milk
½ cup light brown sugar
¼ cup corn syrup
¼ teaspoon salt
2 teaspoons vanilla extract (for caramel)
2 cups milk chocolate chips or melting wafers
1 tablespoon coconut oil or shortening
Instructions
1. Preheat the oven to 350°F and line a square baking dish with parchment paper.
2. In a mixing bowl, cream together the softened butter, granulated sugar, vanilla, and flour until a dough forms.
3. Press the dough into the prepared pan evenly. Bake for 20-22 minutes until lightly golden, then let it cool completely.
4. In a saucepan over medium heat, combine sweetened condensed milk, brown sugar, corn syrup, butter, salt, and vanilla. Stir constantly until it thickens and becomes caramel-like, about 10–15 minutes.
5. Pour the caramel over the cooled shortbread and spread evenly. Chill in the fridge until fully set.
6. Remove from pan, cut into bar shapes. Melt chocolate chips with coconut oil until smooth.
7. Dip each bar into melted chocolate, letting excess drip off. Place on parchment to cool and set.
8. Chill until chocolate is firm. Store in airtight container.
Notes
For a firmer chocolate coating, store the bars in the fridge.
Add a sprinkle of flaky sea salt on top for a salted caramel twist.
