Ingredients
2 large chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons hot honey
1 tablespoon olive oil
8 ounces fettuccine pasta
2 tablespoons butter
3 cloves garlic, minced
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
Salt and pepper, to taste
1 cup Brussels sprouts, thinly sliced
1 tablespoon olive oil (for Brussels chips)
1/2 cup feta cheese
1/2 cup fresh basil leaves
1 tablespoon lemon juice
1 tablespoon water (or more as needed)
Instructions
1. Preheat the oven to 400°F. Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes until crispy.
2. Season chicken breasts with Cajun seasoning. In a hot skillet with olive oil, sear the chicken for 5–6 minutes per side. Drizzle with hot honey, rest, and slice.
3. In a blender, combine feta, basil, lemon juice, olive oil, and water. Blend until creamy. Set aside.
4. In a large skillet, melt butter and sauté garlic until fragrant. Add heavy cream, Parmesan, salt, and pepper. Simmer until thick and creamy.
5. Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
6. Toss pasta with Alfredo sauce, using pasta water to loosen as needed. Top with sliced chicken, drizzle basil-feta sauce, and scatter crispy Brussels chips.
Notes
Let the chicken rest after cooking to keep it juicy and easier to slice.
The Brussels chips are best fresh but can be re-crisped in the oven if needed.
