70 grams crushed ladyfingers
2 tablespoons espresso or strong brewed coffee
200 grams dark or semi-sweet chocolate, for dipping
1 tablespoon cocoa powder, for dusting
Instructions
1. In a medium bowl, combine mascarpone cheese and powdered sugar. Mix until smooth and creamy.
2. Add the crushed ladyfingers and espresso. Mix well until the dough comes together.
3. Chill the mixture in the refrigerator for 30 minutes until it firms up.
4. Scoop and roll into bite-sized balls using your hands.
5. Melt the chocolate and dip each truffle into it, removing excess chocolate.
6. Place the dipped truffles on a parchment-lined tray.
7. Dust lightly with cocoa powder and let the chocolate set before serving.
