With a soft buttery crumb, tender baked pears, and a delicate dusting of powdered sugar, this cozy fruit cake is perfect for a quick breakfast treat, afternoon coffee break, simple dessert, or charming addition to your favorite brunch and dinner ideas. It is an easy recipe with classic flavor, beautiful texture, and just the right balance of sweetness for anyone craving comforting homemade food ideas.

Ingredients

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon zest

1/2 cup milk

3 medium pears, peeled, cored, and sliced

2 tablespoons powdered sugar

Instructions

1. Preheat the oven to 350°F and grease a 9-inch round cake pan.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

4. Add the eggs one at a time, beating well after each addition.

5. Mix in the vanilla extract and lemon zest.

6. Add the dry ingredients in batches, alternating with the milk, and mix just until combined.

7. Fold in about half of the sliced pears.

8. Spread the batter into the prepared pan and arrange the remaining pear slices on top.

9. Bake for 40 to 45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

10. Let the cake cool in the pan for 15 minutes, then transfer to a rack.

11. Dust with powdered sugar before serving.

Notes

Do not overmix the batter once the flour goes in, or the cake can turn dense instead of staying soft and tender.
