Ingredients
2 blocks curry roux
2 medium carrots, chopped
2 medium potatoes, peeled and cubed
1 large onion, sliced
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 pound chicken, beef, or tofu (optional)
4 cups vegetable or chicken stock
1 tablespoon soy sauce
1 teaspoon honey
4 cups steamed white rice
Instructions
1. Heat oil in a large pot and sautée onions until golden. Add garlic and ginger.
2. Add carrots, potatoes, and protein of choice. Cook for 2-3 minutes.
3. Pour in stock to cover ingredients. Bring to a boil, then simmer for 15–20 minutes.
4. Stir in curry roux blocks. Simmer until thickened (about 5–10 minutes).
5. Serve hot over steamed white rice. Garnish if desired.
Notes
For a vegetarian version, skip the meat and use vegetable stock.
