Ingredients

1 lb ground beef

1/2 cup breadcrumbs

1 large egg

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons soy sauce

1 teaspoon sesame oil

1/4 cup brown sugar

2 tablespoons gochujang

1 tablespoon rice vinegar

8 small flour tortillas

2 cups coleslaw mix

1/4 cup mayonnaise

1 tablespoon gochujang (for sauce)


Instructions

1. Preheat oven to 400°F and line a baking sheet with parchment paper.

2. In a bowl, mix ground beef, breadcrumbs, egg, garlic, ginger, soy sauce, and sesame oil. Form into 1-inch meatballs.

3. Place meatballs on baking sheet and bake for 15-18 minutes until golden and cooked through.

4. In a small saucepan, combine soy sauce, brown sugar, gochujang, and rice vinegar. Simmer until thickened.

5. Toss cooked meatballs in the sauce until evenly coated.

6. Mix coleslaw with a splash of rice vinegar. Combine mayo and gochujang to make the drizzle.

7. Warm tortillas. Assemble tacos with meatballs, slaw, and gochujang mayo. Serve immediately.

Notes

Don’t overmix the meatball mixture or they can turn tough—combine just until ingredients are incorporated.
