Ingredients
900g beef chuck roast
4 large carrots, peeled and chopped
4 medium potatoes, cubed
120ml soy sauce
2 tablespoons brown sugar
1 tablespoon sesame oil
4 garlic cloves, minced
1 tablespoon fresh ginger, minced
1 onion, sliced
480ml beef broth
1 tablespoon gochujang (optional)
2 green onions, chopped (for garnish)
1 tablespoon sesame seeds (for garnish)
Instructions
1. Season and sear the beef chuck roast in a hot pan until well browned on all sides.
2. In the same pan, sauté onion, garlic, and ginger until fragrant.
3. Deglaze the pan with a bit of beef broth, scraping up all browned bits.
4. Mix soy sauce, brown sugar, sesame oil, and remaining beef broth in a bowl. Stir in gochujang if using.
5. Place beef into a Dutch oven or slow cooker. Add carrots and potatoes around it.
6. Pour braising liquid and sautéed aromatics over everything.
7. Cover and cook on low for 8 hours, or in the oven at 325°F for 3.5–4 hours.
8. Garnish with chopped green onions and sesame seeds before serving.
Notes
Searing the beef first adds rich flavor and helps build a deep braising base.
For extra spice, increase gochujang or add red pepper flakes to the sauce.
