Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/3 cup melted butter
16 oz cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
2 large eggs
1 cup pumpkin puree
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground cloves
Whipped cream, for topping (optional)
Instructions
1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into pan base. Bake 8 minutes, then cool.
3. Beat cream cheese, 1/2 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing after each.
4. Divide batter in half. Mix pumpkin, cinnamon, nutmeg, and cloves into one half.
5. Pour plain batter over crust, then gently add pumpkin batter on top. Smooth with spatula.
6. Bake for 50–60 minutes or until center is set. Cool at room temp, then refrigerate for at least 4 hours.
7. Serve chilled with whipped cream and a sprinkle of cinnamon if desired.
Notes
Use a water bath to prevent cracking if desired.
