Ingredients

1 cup old-fashioned oats

1 1/2 cups boiling water

1 cup brown sugar

1 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

1 1/3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 teaspoon vanilla extract

1 1/2 cups shredded coconut

6 tablespoons unsalted butter (for topping)

1/2 cup brown sugar (for topping)

1/4 cup evaporated milk


Instructions

1. Pour boiling water over oats and let sit for 20 minutes.

2. Mix soaked oats with sugars, butter, eggs, and vanilla.

3. Stir in flour, baking soda, spices, and salt.

4. Pour batter into greased 9×13” pan. Bake at 350°F for 30–35 minutes.

5. In a saucepan, melt topping butter with brown sugar and evaporated milk. Stir in coconut.

6. Pour topping over hot cake.

7. Broil for 2–3 minutes until the top is bubbly and golden.

Notes

Let the glaze bubble slightly under the broiler—don’t walk away!
