Ingredients

4 salmon fillets (about 6 oz each), skin-on or off

1 lb baby potatoes, halved

2 cups broccoli florets

3 tbsp olive oil, divided

Salt and freshly cracked pepper, to taste

1/2 tsp garlic powder

1/2 tsp paprika

3 tbsp unsalted butter

2 tbsp lemon juice (freshly squeezed)

1 tsp lemon zest

1 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Toss halved baby potatoes with 2 tbsp olive oil, garlic powder, paprika, salt, and pepper. Roast on a baking sheet for 15 minutes.
  2. Flip potatoes and add broccoli to the sheet. Drizzle with remaining olive oil, season lightly, and roast for another 10 minutes.
  3. Pat salmon dry. Season both sides with salt and pepper. Melt butter in a small pan and stir in lemon juice and zest.
  4. Heat a skillet over medium-high and sear salmon 3-4 minutes per side. Pour lemon butter sauce over fillets during final minute.
  5. Serve salmon with roasted vegetables. Spoon any extra lemon butter sauce over the top and garnish with parsley.
