Ingredients

1 box lemon cake mix

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

1 egg

1 tsp vanilla extract

Zest of 1 lemon (optional)

1/2 to 1 cup powdered sugar (for rolling and topping)


Instructions

  1. In a large bowl, beat together cream cheese and butter until fluffy.
  2. Add egg and vanilla extract; mix until fully incorporated.
  3. Stir in lemon cake mix gradually. Fold in lemon zest if using.
  4. Cover and chill the dough for at least 30 minutes.
  5. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  6. Roll dough into tablespoon-sized balls. Coat each ball in powdered sugar.
  7. Place on baking sheet 2 inches apart and bake 10–12 minutes.
