Ingredients

1 lb ground beef

1 small onion, chopped

2 cloves garlic, minced

15 oz tomato sauce

2 tbsp tomato paste

15 oz kidney beans, drained and rinsed

2 tbsp chili powder

1 tsp ground cumin

1 tsp paprika

1 tsp salt

1/2 tsp black pepper

1 tbsp brown sugar

1/2 cup beef broth

8 hot dogs

8 hot dog buns

2 cups shredded cheddar cheese

1/2 cup diced white onion

1/4 cup sliced green onions


Instructions

1. Brown the ground beef in a skillet over medium heat until fully cooked, then add the chopped onion and minced garlic and cook for 2 to 3 more minutes. Drain excess grease.

2. Transfer the beef mixture to the crockpot and stir in the tomato sauce, tomato paste, kidney beans, chili powder, cumin, paprika, salt, black pepper, brown sugar, and beef broth.

3. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chili is thick and flavorful.

4. Warm the hot dogs by simmering, grilling, baking, or heating them during the last 20 to 30 minutes of the chili cooking time.

5. Place each hot dog into a bun and spoon a generous amount of chili over the top.

6. Sprinkle with shredded cheddar cheese, diced white onion, and sliced green onions, then serve immediately.

Notes

Do not add too much liquid to the chili, or it can become runny and slide right off the hot dogs instead of staying thick and hearty.
