4 slices sourdough bread
1 cup cooked lobster meat, chopped
1 cup shredded mozzarella cheese
1/2 cup shredded white cheddar cheese
2 tablespoons mayonnaise
1 tablespoon lemon juice
1 teaspoon minced garlic
1 tablespoon chopped chives, plus more for garnish
2 tablespoons softened butter
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a bowl, gently mix the chopped lobster meat with mayonnaise, lemon juice, minced garlic, chopped chives, salt, and black pepper.
2. Butter one side of each bread slice.
3. On the unbuttered side of 2 bread slices, layer half of the mozzarella, the lobster mixture, and the white cheddar.
4. Top with the remaining bread slices, keeping the buttered sides facing outward.
5. Heat a skillet over low to medium-low heat.
6. Place the sandwiches in the skillet and cook for 3 to 4 minutes, until the first side is golden brown.
7. Flip carefully and cook for another 3 to 4 minutes, until the second side is golden and the cheese is fully melted.
8. Rest for 1 minute, slice, garnish with extra chives, and serve hot.
