Ingredients
For the Cake:
1 cup whole milk
4 Earl Grey tea bags (or 2 tbsp loose leaf)
2 1/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup granulated sugar
1/2 cup brown sugar
3/4 cup unsalted butter, room temperature
3 large eggs
1 tbsp vanilla extract
1/2 cup sour cream
For the Frosting:
1 cup unsalted butter, softened
3 cups powdered sugar
1–2 tbsp brewed Earl Grey tea (cooled)
1 tsp vanilla extract
A drop of purple food coloring (optional)
Dried lavender or edible flowers for garnish (optional)
Instructions
- Heat the milk until steaming, then steep Earl Grey tea for 10 minutes. Discard tea and let milk cool.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well. Stir in vanilla extract.
- Alternate adding dry ingredients and tea-infused milk into the butter mixture. Mix just until combined.
- Gently fold in sour cream until batter is smooth.
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.
- Pour batter into the pan and bake for 30-35 minutes. Cool completely before frosting.
