Ingredients

1 cup all-purpose flour

1 1/2 cups granulated sugar (divided)

1/2 cup unsalted butter, melted

1 cup milk

1 teaspoon vanilla extract

1 tablespoon lemon zest

1/2 cup fresh lemon juice

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1 1/2 cups boiling water


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine the flour, 1 cup of sugar, baking powder, and salt. Stir in the milk, melted butter, and vanilla extract until smooth. Pour this batter into the prepared baking dish (do not stir after).
  3. In a separate bowl, combine the remaining 1/2 cup of sugar, lemon zest, and lemon juice. Carefully spoon this mixture over the batter without stirring.
  4. Gently pour the boiling water over the entire dish. Do not stir.
  5. Bake for 40-45 minutes or until the top is golden brown and set.
