Description

This Make Ahead Biscuit Breakfast Casserole is the kind of easy breakfast recipe that makes mornings feel simple and satisfying. Fluffy biscuit pieces bake with savory sausage, eggs, bell peppers, onions, and melty cheddar cheese into one hearty, comforting dish. It is perfect for a quick breakfast, holiday brunch, meal prep, family breakfast ideas, easy dinner-for-breakfast nights, and make-ahead food ideas when you want something warm, filling, and dependable.

Ingredients

1 can refrigerated biscuits

1 pound breakfast sausage

8 large eggs

1 cup whole milk

2 cups shredded cheddar cheese

1 red bell pepper, diced

1 green bell pepper, diced

1/2 yellow onion, diced

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon butter, for greasing the baking dish

Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking dish with butter.

2. Brown the breakfast sausage in a skillet over medium heat until fully cooked, then drain excess grease.

3. Add the diced onion, red bell pepper, and green bell pepper to the skillet and cook for 3 to 4 minutes until slightly softened.

4. Cut the refrigerated biscuits into quarters and spread them evenly in the prepared baking dish.

5. Spoon the sausage and vegetable mixture evenly over the biscuit pieces.

6. Sprinkle the shredded cheddar cheese across the top.

7. In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until smooth.

8. Pour the egg mixture evenly over the casserole.

9. Cover and refrigerate overnight, or let it rest for 10 minutes if baking right away.

10. Bake uncovered for 35 to 40 minutes, until the eggs are set and the top is golden brown.

11. Let the casserole rest for 10 minutes before slicing and serving.

Notes

Avoid overbaking the casserole, because the eggs can turn rubbery and the biscuit pieces can dry out instead of staying soft and tender.
