Ingredients

2 large cucumbers, thinly sliced

1 pint cherry tomatoes, halved

1 small red onion, thinly sliced

1/4 cup apple cider vinegar

2 tablespoons olive oil

1 tablespoon sugar or honey

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh dill (or 1 tsp dried dill)

Optional: 1 tsp garlic powder or 1 clove minced garlic


Instructions

  1. Wash all vegetables thoroughly. Slice cucumbers and onion; halve the tomatoes.
  2. In a bowl, whisk together apple cider vinegar, olive oil, sugar or honey, salt, pepper, dill, and garlic if using.
  3. Combine sliced cucumbers, tomatoes, and onions in a large bowl.
  4. Pour the marinade over the vegetables and toss gently.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Toss again before serving. Garnish with extra dill if desired.
