Ingredients

2 large cucumbers, thinly sliced

1 pint cherry or grape tomatoes, halved

1 medium red or yellow onion, thinly sliced

1 bell pepper (any color), diced

1/4 cup fresh parsley, finely chopped

1/2 tsp crushed red pepper flakes (optional)

1/4 cup apple cider vinegar (or white vinegar)

1/4 cup olive oil

1 tbsp sugar (or honey)

1/2 tsp salt

1/2 tsp black pepper


Instructions

  1. Wash and prep the vegetables: slice cucumbers, halve tomatoes, slice onions, and dice bell peppers.
  2. In a medium bowl or jar, whisk together vinegar, olive oil, sugar (or honey), salt, pepper, and red pepper flakes.
  3. In a large bowl, combine all chopped vegetables.
