Ingredients
For the Chicken:
2 boneless, skinless chicken breasts (cut into bite-sized pieces)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
For the Pasta:
8 oz penne pasta (or your favorite pasta)
Salt, for boiling the pasta
For the Creamy Sauce:
1 tablespoon olive oil
3 cloves garlic (minced)
1/2 teaspoon red pepper flakes (adjust to taste)
1 cup heavy cream
1/2 cup chicken broth (low sodium preferred)
1/2 cup grated Parmesan cheese
1/4 cup chopped sun-dried tomatoes (optional for extra flavor)
Salt and pepper, to taste
Fresh parsley (chopped, for garnish)
Instructions
-
Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain, reserving 1/2 cup of pasta water. Set aside. -
Sear the Chicken:
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season chicken with garlic powder, onion powder, salt, and pepper. Sear the chicken for 4-5 minutes on each side, until golden and cooked through. Remove from the skillet and set aside. -
Make the Sauce:
In the same skillet, add 1 tablespoon olive oil and sauté the garlic and red pepper flakes until fragrant (about 30 seconds). Add heavy cream and chicken broth, simmer for 2-3 minutes. Stir in Parmesan cheese and sun-dried tomatoes (if using). Let the sauce thicken for another 2-3 minutes. Season with salt and pepper. -
Combine Pasta, Chicken, and Sauce:
Add the cooked pasta and chicken back into the skillet. Toss everything together until well coated in the sauce. If the sauce is too thick, add some reserved pasta water to reach your desired consistency. -
Serve and Garnish:
Serve the pasta on plates, garnished with fresh chopped parsley. Optionally, sprinkle more Parmesan cheese on top.
