Ingredients
3 pounds Russet potatoes
4 tablespoons butter
4 ounces cream cheese
1 cup sour cream
1/2 cup milk
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
2 tablespoons chopped chives (optional)
Instructions
1. Peel and chop the potatoes into chunks. Boil in salted water until fork-tender (15-20 minutes).
2. Drain and return potatoes to the pot. Add butter, cream cheese, sour cream, milk, garlic powder, salt, and pepper.
3. Mash until smooth and creamy.
4. Fold in half the shredded cheese. Spread into a greased casserole dish and top with remaining cheese.
