Ingredients

4 large egg whites, room temperature

1 cup granulated sugar

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract

1/8 teaspoon peppermint extract

green gel food coloring, as needed

2 tablespoons holiday sprinkles

18 gold star sprinkles


Instructions

1. Preheat the oven to 200°F and line 2 baking sheets with parchment paper.

2. Add the egg whites and cream of tartar to a clean mixing bowl and beat until foamy.

3. Slowly add the sugar, 1 tablespoon at a time, while beating on high speed until stiff, glossy peaks form.

4. Beat in the vanilla extract and peppermint extract.

5. Add green gel food coloring and mix just until the color is even.

6. Transfer the meringue to a piping bag fitted with a large star tip.

7. Pipe tree shapes onto the prepared baking sheets by making stacked swirls, starting with a wide base and narrowing toward the top.

8. Decorate each tree with holiday sprinkles and place a gold star sprinkle on top.

9. Bake for 1 hour and 30 minutes, then turn off the oven and leave the meringues inside for 1 additional hour to dry out completely.

10. Remove from the oven, cool fully, and store in an airtight container at room temperature.

Notes

Avoid even a tiny bit of egg yolk or grease in the mixing bowl, because clean egg whites are what help the meringue whip up properly and hold its shape.
