Ingredients

1 cup graham cracker crumbs

4 tablespoons melted butter

16 ounces cream cheese

1⁄2 cup granulated sugar (plus extra for topping)

2 large eggs

1 teaspoon vanilla extract

1⁄4 cup heavy cream


Instructions

1. Preheat the oven to 325°F (163°C) and line a 12-cup muffin tin with cupcake liners.

2. Mix the graham cracker crumbs and melted butter, then press evenly into the bottom of each liner to form the crust.

3. In a bowl, beat the cream cheese until smooth, then add the sugar and mix until fluffy.

4. Add eggs one at a time, mixing between each. Add vanilla and heavy cream. Mix until smooth.

5. Pour the cheesecake filling over the crusts evenly.

6. Bake for 18–22 minutes until centers are just set. Let cool completely and refrigerate for at least 2 hours.

7. Before serving, sprinkle a thin layer of sugar on each cheesecake and torch until caramelized and crisp.

8. Serve immediately to enjoy the perfect crackly topping.

Notes

These are best torched just before serving for the ideal crunchy sugar topping.

If you don’t have a torch, place under the broiler for 1–2 minutes, watching closely.
