Ingredients

1 lb ribeye or sirloin steak, cut into bite-sized cubes

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

5 tablespoons unsalted butter

5 garlic cloves, finely minced

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

8 oz rigatoni pasta

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Drain and reserve 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet. Season steak with salt and pepper. Sear in batches for 2-3 minutes per side. Set aside.
  3. In the same skillet, melt butter over medium heat. Add garlic, Italian seasoning, and red pepper flakes. Cook until fragrant.
  4. Pour in heavy cream and simmer. Stir in mozzarella and Parmesan, whisking until smooth.
  5. Toss rigatoni into the cheese sauce, adding pasta water if needed. Fold in the steak and warm through.
  6. Serve garnished with parsley and more Parmesan if desired.
