Ingredients
1 ½ cups warm water (110°F/45°C)
2 ¼ teaspoons active dry yeast (1 packet)
1 teaspoon granulated sugar
4 cups all-purpose flour
1 teaspoon salt
2 tablespoons unsalted butter, melted
8 ounces mozzarella cheese, cut into sticks
⅓ cup baking soda
1 egg, beaten
Coarse sea salt (for topping)

Instructions
- In a bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.
- Add flour, salt, and melted butter. Mix and knead until smooth and elastic.
- Cover dough and let rise for 1 hour until doubled.
- Preheat oven to 450°F (230°C) and line a baking sheet.
- Cut mozzarella into 2–3 inch sticks.
- Divide dough into 8 pieces. Roll each into a 20-inch rope.
- Flatten, place cheese inside, and seal dough around it.
- Twist into pretzel shapes.
- Boil each pretzel in baking soda water for 20–30 seconds.
- Remove and place on baking sheet.
- Brush with egg wash and sprinkle salt/herbs.
