Ingredients
2 cups vanilla wafer crumbs
2 tablespoons granulated sugar
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1 box instant banana cream pudding mix, 3.4 ounces
1 cup powdered sugar
1 teaspoon vanilla extract
1 1/4 cups cold heavy whipping cream
2 ripe bananas, sliced
1 cup whipped topping or stabilized whipped cream
2 tablespoons vanilla wafer crumbs, for topping
Instructions
1. In a medium bowl, stir together the vanilla wafer crumbs, granulated sugar, and melted butter until evenly combined.
2. Press the crust mixture firmly into the bottom of a 9-inch springform pan. Place it in the refrigerator to chill while you make the filling.
3. In a large mixing bowl, beat the softened cream cheese until completely smooth.
4. Add the dry banana pudding mix, powdered sugar, and vanilla extract, then beat again until thick and creamy.
5. In a separate bowl, whip the cold heavy cream until stiff peaks form.
6. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.
7. Fold in half of the sliced bananas or layer them over the chilled crust if you prefer more visible banana pieces.
8. Spread the filling evenly over the crust and smooth the top.
9. Cover and refrigerate for at least 6 hours, or overnight, until fully set.
10. Before serving, top with whipped topping or whipped cream, the remaining banana slices, and extra vanilla wafer crumbs.
