Ingredients

1 1/2 cups old-fashioned rolled oats

1 cup all-purpose flour

3/4 cup brown sugar, packed

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup unsalted butter, melted

1 teaspoon vanilla extract

3/4 cup fruit jam or preserves (raspberry, strawberry, etc.)


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. In a large bowl, combine oats, flour, brown sugar, baking soda, and salt.

3. Add melted butter and vanilla extract. Mix until a crumbly dough forms.

4. Press two-thirds of the mixture firmly into the prepared pan to form the base.

5. Spread the jam evenly over the base, leaving a small border around the edges.

6. Sprinkle the remaining oat mixture over the top and gently press it down.

7. Bake for 30–35 minutes, until golden brown on top.

8. Cool completely before slicing into bars.

Notes

Warm the jam slightly before spreading if it’s too thick.

Let the bars cool fully before cutting to avoid crumbling.
