Ingredients
1 lb ground beef 80/20
2 large yellow onions thinly sliced
1 tsp kosher salt
1/2 tsp black pepper
4 slices American cheese
4 hamburger buns
1 tbsp neutral oil or butter
Instructions
1. Heat a cast-iron skillet or griddle over medium-high heat and lightly grease it.
2. Divide ground beef into four loose balls.
3. Place beef on the skillet, top with onions, and smash flat.
4. Season with salt and pepper.
5. Cook until a deep crust forms, then flip carefully.

7. Transfer to buns and serve immediately.
Notes
