Ingredients
¾ cup white rice
1 ½ cups water
4 cups whole milk
½ cup granulated sugar
2 large eggs
2 tablespoons unsalted butter
1 ½ teaspoons vanilla extract
¼ teaspoon salt
¼ teaspoon ground cinnamon or nutmeg (for topping)
Instructions
1. In a medium saucepan, cook rice in water over medium heat until just tender, about 15-20 minutes. Drain any remaining water.
2. Add milk, sugar, and salt to the saucepan with the cooked rice. Simmer gently over medium heat, stirring frequently to prevent scorching.
3. In a separate bowl, beat the eggs. Gradually add a ladle of the hot rice mixture into the eggs while whisking constantly to temper them.
4. Slowly pour the tempered egg mixture back into the saucepan, stirring constantly.
5. Continue cooking for 5-10 minutes until the pudding thickens to your desired consistency.
6. Remove from heat, stir in the butter and vanilla extract until smooth.
7. Spoon the pudding into serving dishes and sprinkle with cinnamon or nutmeg.
8. Serve warm or chill in the refrigerator before serving.
Notes
Use short-grain or medium-grain rice for maximum creaminess.
If pudding thickens too much when chilled, stir in a splash of milk before serving.
