Ingredients

1 1/2 cups cooked white rice

3 large eggs

1/2 cup diced chicken thigh or breast

1/4 cup chopped onion

1/4 cup diced carrot

1/4 cup peas or mixed vegetables

3 tablespoons ketchup

1 teaspoon soy sauce

2 tablespoons milk or cream (optional)

1 tablespoon butter or oil

Salt to taste

Pepper to taste

Chopped scallions (for garnish)

Extra ketchup or demi-glace (for serving)


Instructions

1. Heat butter or oil in a skillet over medium heat. Add diced chicken and cook until lightly browned.

2. Add chopped onion, carrot, and peas. Sauté until vegetables soften.

3. Stir in cooked rice. Break it apart and mix evenly.

4. Add ketchup and soy sauce. Stir well to coat and heat through. Season with salt and pepper.

5. In a bowl, whisk eggs with milk (if using) and a pinch of salt.

6. In a nonstick skillet, melt butter and pour in egg mixture. Cook gently until just set but still soft.

7. Spoon the rice mixture onto one side of the omelet. Fold over and slide onto a plate.

8. Garnish with scallions and a drizzle of ketchup or demi-glace. Serve immediately.

Notes

Day-old rice is best for the perfect non-mushy fried rice texture.

To make this vegetarian, skip the chicken and load up on veggies or use tofu.
