4 bone-in, skin-on chicken thighs

1 pound baby potatoes

4 cloves garlic, crushed

2 cups chicken broth

1 tablespoon fresh thyme leaves

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Pat the chicken dry and season both sides with salt and pepper.

2. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken skin-side down until golden and crisp, about 5-6 minutes per side. Remove and set aside.

3. In the same skillet, add onions and garlic. Sauté until softened, scraping up browned bits from the pan.

4. Sprinkle flour over the onions, stir to coat, and slowly whisk in chicken broth until smooth. Simmer 2-3 minutes.

5. Return chicken to the skillet, nestle potatoes around, add butter, and sprinkle with fresh thyme.
