Ingredients

2 tablespoons olive oil

1.5 pounds boneless skinless chicken breasts, cut into chunks

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

0.5 teaspoon black pepper

0.75 cup BBQ sauce

2 tablespoons honey

2 cups chicken broth

1 cup long grain white rice

2 tablespoons chopped parsley or green onions, for garnish (optional)


Instructions

1. Heat olive oil in a large skillet over medium-high heat.

2. Season chicken pieces with garlic powder, onion powder, salt, and pepper.

3. Sear the chicken for 5–7 minutes until browned on all sides. Remove and set aside.

4. In the same pan, pour in chicken broth and bring to a simmer.

5. Stir in the rice, reduce heat to low, cover, and cook for about 15 minutes.

6. While rice cooks, mix BBQ sauce and honey in a bowl.

7. Add seared chicken back on top of the rice and spoon the honey BBQ sauce over the chicken.

8. Cover again and cook another 10 minutes until chicken is cooked through and rice is tender.

9. Let it sit covered for 5 minutes, then fluff and serve.

10. Garnish with parsley or green onions if desired.

Notes

Use a thick BBQ sauce for best glaze and flavor.

Add a splash of water when reheating to keep the rice soft.
