Ingredients

1 lb large shrimp, peeled and deveined

3 medium zucchinis, spiralized

2 tablespoons olive oil

4 garlic cloves, minced

Juice and zest of 1 lemon

1/2 teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste

1 tablespoon chopped parsley (for garnish)

Lemon wedges for serving


Instructions

  1. Spiralize the zucchini and lightly salt. Set on paper towels to drain excess moisture.
  2. Heat 1 tbsp olive oil in a large skillet. Cook shrimp for 2 minutes per side until pink and opaque. Remove and set aside.
  3. Add remaining olive oil and minced garlic plus lemon zest to the skillet. Sauté for 1 minute.
  4. Add zucchini noodles and sauté for 2-3 minutes until just tender.
  5. Return shrimp to skillet. Add lemon juice, salt, pepper, and red pepper flakes. Toss everything together.
  6. Garnish with parsley and serve with lemon wedges.
