Ingredients

1 lb ground beef

1 small onion, diced

2 cups beef broth

1 can (15 oz) crushed tomatoes

1 can (15 oz) kidney beans, drained and rinsed

2 cups elbow macaroni, uncooked

2 cups shredded cheddar cheese

1/2 cup sour cream (for topping, optional)

2 tablespoons chopped parsley or green onions (optional)


Instructions

1. In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it apart as it cooks. Drain excess fat.

2. Add diced onion and minced garlic. Cook until onion is translucent and fragrant.

3. Stir in chili powder, cumin, salt, and pepper. Let it cook for 1 minute to bloom the spices.

4. Pour in crushed tomatoes and beef broth. Stir to combine.
