Ingredients

1 lb kielbasa sausage, sliced into coins

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, diced

3 cups chicken broth

1 cup heavy cream

2 cups uncooked penne pasta

1 teaspoon paprika

Salt and pepper to taste

1 ½ cups shredded sharp cheddar cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add sliced kielbasa and cook until browned, about 4–5 minutes. Remove and set aside.
  3. In the same pot, sauté diced onion until translucent, then stir in garlic for 30 seconds.
  4. Pour in chicken broth and heavy cream. Bring to a simmer.
  5. Add uncooked penne, paprika, salt, and pepper. Stir to coat and cover the pot.
  6. Simmer for 10–12 minutes until pasta is tender, stirring occasionally.
  7. Return kielbasa to the pot and stir in cheddar and Parmesan cheese until melted.
  8. Garnish with chopped parsley and serve hot.
