Ingredients

1 lb (450g) chicken breast, cut into bite-sized pieces

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

3 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon lemon zest

½ cup chicken broth

1 cup heavy cream

Juice of 1 large lemon

1 lb (450g) potato gnocchi (store-bought or homemade)

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Lemon slices, for serving


Instructions

  1. Season chicken with salt and pepper. In a large skillet or Dutch oven, heat olive oil over medium-high heat and cook chicken until golden and cooked through (5–7 minutes). Remove and set aside.
  2. Lower the heat, melt butter in the same pot, then add garlic and lemon zest. Sauté until fragrant (1–2 minutes).
  3. Stir in chicken broth to deglaze, then add cream and lemon juice. Simmer 3–4 minutes.
  4. Add gnocchi and stir to coat. Cover and cook 5–7 minutes until tender, stirring occasionally.
  5. Return chicken to the pot with Parmesan. Stir and heat through. Adjust seasoning.
