Ingredients

1 pound ground beef

1 cup elbow macaroni

1 cup diced carrots

1 cup diced celery

1 cup diced onion

2 cloves garlic, minced

4 cups beef broth

2 cups whole milk or half-and-half

2 cups shredded sharp cheddar cheese

4 tablespoons butter

3 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

2 tablespoons chopped fresh parsley (optional for garnish)


Instructions

1. In a large pot over medium heat, brown the ground beef. Drain excess fat and set aside.

2. Add 2 tablespoons of butter to the same pot and sauté carrots, celery, and onion until softened. Add garlic and cook for 1 minute.

3. Push the veggies to one side of the pot and add the remaining 2 tablespoons of butter. Stir in the flour to form a roux and cook for 2 minutes.

4. Gradually whisk in beef broth and milk, stirring to avoid lumps.
