Ingredients

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

2 tablespoons butter

1 small onion, finely chopped

4 cloves garlic, minced

½ teaspoon red pepper flakes (adjust to taste)

1 cup orzo pasta

½ cup sun-dried tomatoes, chopped

2 cups chicken broth (or seafood broth)

½ cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges, for serving


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add shrimp, season with salt, pepper, and paprika; cook for 1–2 minutes per side. Remove shrimp and set aside.
  3. In the same skillet, add chopped onion; cook until softened.
  4. Stir in garlic and red pepper flakes; cook for another 30 seconds.
  5. Add dry orzo and toast for 1–2 minutes.
  6. Pour in chicken broth and add sun-dried tomatoes; bring to a simmer.
  7. Cover and cook for 8–10 minutes, stirring occasionally, until orzo is tender.
  8. Stir in heavy cream and Parmesan cheese; season to taste.
  9. Return shrimp to the pan; stir gently and heat through.
  10. Garnish with chopped parsley and serve with lemon wedges.
