Ingredients

8 oz rotini pasta (or any short pasta)

1 lb sirloin steak, cut into bite-sized strips

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic, minced

1 jalapeño, thinly sliced (plus extra for garnish)

1 teaspoon smoked paprika

1 teaspoon onion powder

Salt and pepper, to taste

1½ cups beef broth

1 cup heavy cream

1½ cups sharp cheddar cheese, shredded

Fresh parsley or cilantro, for garnish (optional)


Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Season steak with salt, pepper, and a pinch of smoked paprika.
  3. Heat olive oil in a large skillet over medium-high. Sear steak for 2-3 minutes per side. Remove and set aside.
  4. Lower heat to medium, add butter, garlic, and jalapeños. Sauté for 1-2 minutes.
  5. Add onion powder and remaining paprika, then pour in beef broth and cream. Simmer 3-4 minutes.
  6. Reduce heat, stir in cheddar until fully melted and smooth.
  7. Return pasta and steak to skillet. Mix well and simmer for a couple more minutes.
