Ingredients

1.5 lb ground chicken

0.5 cup grated Parmesan cheese

0.75 cup breadcrumbs

2 cloves garlic, minced

0.5 small onion, finely chopped

1 tsp Italian seasoning

1 large egg

0.5 cup marinara sauce (for meatloaf mix)

0.5 cup marinara sauce (for topping)

1 cup shredded mozzarella cheese

2 tbsp chopped fresh parsley


Instructions

1. Preheat your oven to 375°F and line a baking sheet with parchment paper or foil. Lightly grease to prevent sticking.

2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, garlic, onion, Italian seasoning, egg, and ½ cup marinara. Mix until just combined.

3. Shape the mixture into a loaf on the prepared sheet.

4. Bake uncovered for 40–45 minutes or until the internal temperature reaches 165°F.

5. Remove from oven. Spread the remaining ½ cup marinara on top.

6. Sprinkle with mozzarella and return to oven for 10–12 minutes, until cheese is melted and bubbly.

7. Let the meatloaf rest 10 minutes before slicing.

8. Garnish with parsley and serve warm.

Notes

Don’t overmix the meat or the loaf may become dense.

Use a meat thermometer to avoid under or overcooking — aim for 165°F inside.
