1 lb (450g) baby carrots or peeled and halved whole carrots
2 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup grated parmesan cheese
1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Rinse and dry baby carrots, or peel and halve whole carrots.
- In a large bowl, toss carrots with olive oil, garlic, salt, and pepper until evenly coated.
