Ingredients

Cupcakes:

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1/4 cup peach puree

1/4 cup champagne or sparkling wine

1 tsp vanilla extract

Buttercream Frosting:

1 cup unsalted butter, softened

3 1/2 cups powdered sugar

3 tbsp peach puree

1 tbsp champagne

Orange food coloring (optional)

Optional Toppings:

Peach slices

Maraschino cherries

Sugar crystals or edible glitter


Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with liners.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. In a separate bowl, beat butter and sugar until fluffy.
  4. Add eggs one at a time, then mix in peach puree, champagne, and vanilla.
  5. Gradually mix in dry ingredients until just combined.
  6. Divide batter into liners and bake 18-22 minutes. Cool completely.
  7. Beat butter for frosting, then add powdered sugar gradually.
  8. Add peach puree, champagne, and food coloring if using. Beat until smooth.
  9. Frost cupcakes and garnish as desired.
