Ingredients

For the Crumble Mixture:

2 ½ cups all-purpose flour

1 cup granulated sugar

½ cup light brown sugar, packed

1 tsp ground cinnamon

½ tsp baking powder

¼ tsp salt

1 cup unsalted butter, cold and cubed

1 egg, lightly beaten

For the Peach Filling:

4 cups fresh or canned peaches, peeled and sliced

2 tbsp cornstarch

⅓ cup granulated sugar

1 tsp vanilla extract

½ tsp ground cinnamon

1 tbsp lemon juice (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, sugars, cinnamon, baking powder, and salt.
  3. Add cold cubed butter and blend until mixture resembles coarse crumbs.
  4. Mix in beaten egg until the dough starts to clump.
  5. Press 2/3 of the crumble mixture firmly into the prepared pan.
  6. In another bowl, toss peaches with cornstarch, sugar, vanilla, cinnamon, and lemon juice.
  7. Spread peach mixture evenly over the crust layer.
  8. Sprinkle remaining crumble mixture on top and gently press it down.
  9. Bake for 40–45 minutes until golden and bubbling.
  10. Let cool completely before slicing into bars.
