Ingredients

2 cups finely chopped pecans

1 cup graham cracker crumbs

1 cup brown sugar

½ cup maple syrup or corn syrup

½ tsp vanilla extract

½ tsp salt

1 cup semi-sweet chocolate chips

1 tbsp coconut oil or butter

Extra chopped pecans (for topping)


Instructions

  1. Toast pecans in a dry skillet over medium heat for 4-5 minutes, stirring often.
  2. In a bowl, mix toasted pecans, graham crumbs, brown sugar, syrup, vanilla, and salt until sticky.
  3. Roll into 1-inch balls and place on a parchment-lined tray.
  4. Freeze for 20-30 minutes until firm.
  5. Melt chocolate chips with coconut oil.
  6. Dip each ball into melted chocolate and top with chopped pecans.
