Ingredients
1 cup pecans
1/2 cup brown sugar
1/2 cup unsalted butter (melted, divided)
1 tsp vanilla extract
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup milk
2 large eggs
Instructions
1. Melt 1/4 cup of butter and mix with brown sugar. Pour into a greased 9-inch round cake pan and top evenly with pecans.
2. In a large bowl, cream remaining 1/4 cup butter with granulated sugar. Beat in eggs and vanilla extract.
3. In a separate bowl, whisk flour, baking powder, and salt.
4. Alternate adding dry ingredients and milk into the butter mixture, mixing until smooth.
5. Pour batter over the pecan mixture in the pan.
6. Bake at 350°F (175°C) for 35–40 minutes or until a toothpick inserted in the center comes out clean.
7. Let cake cool for 5 minutes, run a knife around the edges, invert onto a plate, and carefully lift the pan to reveal the topping.
