Ingredients
1 ½ cups chocolate cookie crumbs
5 tablespoons unsalted butter, melted
24 ounces cream cheese, softened
1 cup granulated sugar
1 cup sour cream
3 large eggs
1 tablespoon espresso powder
1 teaspoon vanilla extract
½ teaspoon peppermint extract
8 ounces semi-sweet chocolate, melted
½ cup heavy cream (for ganache)
4 ounces semi-sweet chocolate, chopped (for ganache)
1 cup heavy cream (for whipped topping)
2 tablespoons powdered sugar
Peppermint candies, crushed
Instructions
1. Preheat oven to 325°F. Mix chocolate cookie crumbs and melted butter, then press into the bottom of a springform pan. Bake for 10 minutes and let cool.
2. Beat cream cheese and sugar until smooth. Mix in sour cream, vanilla, espresso powder, and peppermint extract. Add eggs one at a time. Stir in melted chocolate until combined.
