Ingredients

1 1/2 cups heavy cream, divided

4 ounces cream cheese, softened

1/2 cup powdered sugar

1/4 cup unsweetened cocoa powder

4 ounces semi-sweet chocolate, melted and slightly cooled

1 teaspoon instant espresso powder

1/2 teaspoon peppermint extract

1 teaspoon vanilla extract

1 pinch salt

1/2 cup whipped cream, for topping

2 tablespoons chocolate shavings or crushed candy canes, for garnish

mint leaves, optional for garnish


Instructions

1. Melt the semi-sweet chocolate until smooth, then let it cool slightly.

2. In a medium mixing bowl, beat the softened cream cheese, powdered sugar, cocoa powder, espresso powder, peppermint extract, vanilla extract, and salt until smooth.

3. Mix the melted chocolate into the cream cheese mixture until fully combined and glossy.

4. In a separate chilled bowl, whip 1 1/4 cups of the heavy cream until soft to medium peaks form.

5. Fold a small spoonful of whipped cream into the chocolate mixture to loosen it.

6. Gently fold in the remaining whipped cream in batches until the mousse is light and airy.

7. Spoon or pipe the mousse into 6 small dessert glasses or jars.

8. Chill for at least 2 hours until set.

9. Whip the remaining 1/4 cup heavy cream if needed for topping, or use prepared whipped cream.

10. Garnish with whipped cream, chocolate shavings or crushed candy canes, and mint leaves before serving.

Notes

Do not overwhip the cream or stir too aggressively when folding, or the mousse can turn dense instead of staying light and silky.
