Ingredients

1.5 lbs boneless chicken breast or thighs, cut into bite-sized cubes

1 cup pineapple chunks (fresh or canned, drained)

1 red bell pepper, diced

1 yellow bell pepper, diced

2 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons vegetable oil

2 tablespoons soy sauce

1 tablespoon hoisin sauce

2 tablespoons rice vinegar

3 tablespoons brown sugar

1/2 cup pineapple juice

1 tablespoon cornstarch + 2 tablespoons water (for slurry)

Salt and black pepper, to taste

Sesame seeds & chopped fresh basil or cilantro, for garnish


Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat 1 tablespoon oil in a large skillet. Cook chicken in batches until golden and cooked through. Set aside.
  3. Add remaining oil to the skillet. Sauté garlic and ginger for 30–60 seconds.
  4. Stir in bell peppers and cook for 3–4 minutes. Add pineapple chunks and cook 2 more minutes.
  5. Mix soy sauce, hoisin, vinegar, sugar, and pineapple juice in a bowl. Pour into skillet.
  6. Create a slurry with cornstarch and water. Stir into sauce and let thicken.
  7. Return chicken to the pan. Toss to coat in sauce and heat through.
  8. Garnish with sesame seeds and herbs. Serve over rice or noodles.
